Mixing, freezing, and thawing

I mix my paste directly into soft plastic squeeze bottles intended
for melted chocolate. (They're a bit like ketchup bottles, but
have a wider mouth and a much softer texture.) From there, I can
squeeze paste directly into Jacquard bottles.

When I've finished with a batch, I consolidate all the remaining
paste into Jacquard bottles, plug the bottles up with pins, put
plastic wrap and twist-ties around them, and pop them in the freezer._
When I need a bottle, it only takes a few minutes to thaw out,
and the results are almost indistinguishable from fresh paste.
