That might be a reference to something I describe, in that when you first stir lemon juice into the powder, you aim for a texture like cookie dough and let that sit overnight. Then you thin that out with your coffee, tea, clove, more juice ... whatever mix the next morning. If you mix enough juice into the powder to get it to cookie dough thickness (I was thinking of sugar-cookie dough) then it's wet enough and acid enough to make the hennotannins break out of the plant material. If you stir in enough lemon juice on the first go to get it to working thickness, you don't have leeway left to play with your other stuff. For hennaeing, I like to thin out the paste to something a tad thicker than stirred up yoghurt.
