Makes sense- except when I lift some, it tends to form a hanging blob
to begin with, so I don't know if this'll be a consistent measure.
I'll try next time, anyway, both as it is naturally and sort of
scraping the side of the spoon so it all starts out in the spoon.

This reminds me of the leather & clay stuff. To carve leather, you
wet it first - you want it to be about the consistency of clay. To
prepare clay, you work it until it's about the consistency of wet
leather.

Maybe this is why Julia Child's cooking show was such a neat idea -
she actually showed the texture of things. See, Catherine, we do need
an e-book with video clips!
