The best advice I have to give you on this one is what I learned via
much experience on the festival circuit last summer here in
Minneapolis.

Frank (my fiance and fellow-henna artist) suggested that we buy a
small footstool so that our clients could sit in our chairs....while
we sit on the ground with their feet (or foot) elevated on the
footstool. This gives me the perfect angle to work directly above
the top of the foot.....most of the people at festivals weren't
getting the soles of their feet done, since they were going to be
walking quite a bit that day...but if you are referring to the soles
of the feet, I normally have them lay on their stomachs. That way I
can work on the bottom of their feet while I sit with my legs crossed.
