boiled, dried, fresh: limes vs. lemons

what is the acidic difference between limes and lemons. so many recipes that i find ask, "dried limes, or a fresh lemon".
and if dried limes/lemons, is it the skin or the actual flesh that is of value? either way is easy for me, i have a food dehydrator.
