In Morocco, they have what they call a 'henna stone' which is ammonia
crystals as you say...they add it to the paste. No big secret!
As for the color of Moroccan henna...I find that the color on my
hands and feet is reddish-brown/burgundy whereas on other parts of my
body it comes out more brown.
