Enigma's Monday Munchies

Enigma’s Vegetable Couscous:

Ingredients:   
  

·    1 – 2 cups Couscous (2 cups makes a week’s worth)
·    1 Green Zucchini
·    1 Yellow Zucchini
·    1 Red Bell Pepper
·    1 Green Bell Pepper
·    1 Yellow Bell Pepper
·    1 Orange Bell Pepper
·    1 Chive
·    1 Can of Corn
·    1 Red Onion
·    1 Carrot
·    1 Tsp Olive Oil
·    1 – 2 cups Vegetable Broth (Use the same amount of broth as you are using of Couscous)

Instructions:
 
1.    Wash, Peel, and Chop up all of the vegetables however you please. I personally find that chopping everything up into little pieces works the best, but do what you want! You can also shred some of the vegetables such as the Zucchini and Carrot.
2.    Drain can of corn but reserve the liquid!! Don’t Dump the Corn Juice Out!!
3.    Put the 1 Tsp Olive Oil in a pan; mix in all of the veggies and drained corn so they’re evenly coated with the Olive Oil. Sprinkle on any seasonings that you want at this time (i.e.; Salt, pepper, lemon pepper, etc)
4.    Turn on burner, (I keep mine set to “high”). Cook for 10-15 minutes, stirring often, until the onions are almost completely soft.
5.    While the veggies are cooking in your pan, bring your Vegetable Broth to a boil. Stir in the same amount of couscous, take off of heat, cover, and let stand until vegetables are done.
6.    When the veggies have been cooking in the pan for 10-15 minutes, turn off burner. Stir in a little bit of Margarine. Then, slowly pour the veggies into the pot that your Couscous is in. Mix well, making sure the vegetables are completely incorporated into the Couscous.
7.    Pour in the Corn Juice that you saved earlier. Mix Well.
8.    Enjoy!!!

This is an excellent recipe!! Not only is it to DIE for, but it’s extremely healthy for you!

You can serve this Couscous hot OR cold. It’s great either way. Some people even enjoy adding a little bit of Soy Sauce to it before eating!

Experiment! Add different vegetables! Try different broths! But most of all, have fun! =-)

Enigma’s Fresh Fruit Muesli:

Ingredients:
   
·    1 Cup Rolled Oats (or Whole Oats, which are healthier)
·    1 Tub of Activia™ Vanilla Yogurt
·    1 Container of fresh Blackberries
·    1 Container of fresh Strawberries
·    1 Container of fresh Raspberries
·    1 Container of fresh Blueberries
·    1 bag of dried (sweetened or unsweetened) Cranberries
·    Optional: 1 bag of Raisins.
·    A bit of Soy Milk (So Good™ Original with Omega 3)
·    Your favorite Granola-type Cereal

Directions:
   
1.    Pour Oats into a large mixing bowl.
2.    Pour in as much Yogurt and Soy Milk as it takes to make it smooth and creamy. (Oats soak up yogurt and soy milk fast, so use quite a bit)
3.    Add in a bit of your favorite Granola-type Cereal, to give it that extra “crunch”.
4.    Chop up strawberries and add. Mix thoroughly.
5.    Add the rest of the fruits, as much of each as you’d like. Mix thoroughly.
6.    Toss in the Cranberries and/or Raisins. Mix thoroughly.
7.    Cover the bowl, or pour into a large container, and let sit in the fridge overnight before serving.

Options: You can also add in some Whey Powder or Energy Powder of some sort and mix it in thoroughly. This turns your Muesli into an even MORE healthy breakfast.

This recipe is so simple but SO good! It tastes like a desert!

The collaboration of the Oatmeal (complex carbohydrate) with Blackberries, Blueberries, Strawberries, Raspberries (Anti-oxidants), along with the added Calcium, Healthy Fat, and Protein from the Yogurt (and added protein powder)… makes this the PERFECT breakfast food. Especially for after work-outs.

The human body can NOT absorb Protein without Complex carbohydrates. And Complex Carbohydrates are the ONLY Carbohydrate that DOES NOT make you fat! Complex Carbs are slow releasing. Which means, throughout the day, it will slowly keep supplying your body with needed energy to help maintain metabolic functioning. Thus; leading to healthy weight maintenance/loss.

Oatmeal, is actually, the NUMBER ONE form of Complex Carbohydrates used by Top fitness models/athletes. Because it is the absolute best form.

Add different fruits, different yogurts, or even try soy yogurt! Experiment and enjoy!!

Enigma’s Banana Toast:

Ingredients:

·    1 whole ripe Banana
·    1 piece whole wheat bread
·    Sprinkles of Cinnamon and Nutmeg
·    A Toaster Oven

Instructions:

1.    Mash up the banana in a bowl with a fork until smooth.
2.    Mix in the Cinnamon and Nutmeg (as much as you’d like).
3.    Spread the Banana Goop onto your piece of un-toasted bread. (You may not be able to fit it all on the bread)
4.    Carefully slide the piece of bread with Nana Goop into the Toaster Oven. Toast on medium setting.
5.    Take out, turn around, and toast again on light setting.
6.    Enjoy!

This is a wonderful recipe for a quick breakfast. Bananas, when heated up, release their natural sugars. This is what makes this recipe so sweet! It’s really delicious! You definitely have no idea what it’s like until you try it! So try it!!

The Best Vegetable Pizza You’ve Ever Had:

Ingredients

·    1 Small Red Eggplant
·    1 Small White Eggplant
·    1 Small Green Zucchini
·    1 Small Yellow Zucchini
·    Half a Red Bell Pepper
·    Half a Yellow Bell Pepper
·    Mushrooms (optional)
·    1 small Chive
·    A bit of a Red Onion
·    1 Medium Sized Pita (Whole Wheat)
·    Some Pizza Sauce
·    Thinly Shredded Mozzarella and Cheddar Cheese. (shred as much as you want on your mini pizza)
·    Fresh Basil
·    Fresh Oregano
·    A little bit of Olive Oil

Directions

1.    Chop up all of the vegetables however you want.
2.    Pre-heat oven to 350f.
3.    Mix up the veggies with the little bit of Olive Oil in a pan on the stove. Set heat to “high”. Cook the veggies in the pan, turning with a spatula, until the oven is ready.
4.    When oven is up to heat, spread the pizza sauce evenly on your Pita Bread and place onto a Baking Sheet.
5.    Pour the cooked Veggies on top, spread around evenly.
6.    Sprinkle on as much cheese as you’d like!
7.    Chop up the Basil and Oregano into teeny weeny pieces. Lightly Sprinkle on top of the cheese on the pita.
8.    Place pita in the oven (on the baking sheet) for 7 minutes.
9.    Broil for 1 – 2 minutes after the 7 minutes.
10.    Slice and enjoy a personal sized, amazing, pizza!!

Experiment, add your favorite veggies. Add meat for the meat lovers. Have fun!

Apple-Strawberry-Banana Crumble:

Ingredients:

·    2 Cups Chopped Apples (any kind)
·    2 Cups Chopped Strawberries
·    1 Ripe Banana
·    1 Cup Rolled Oats
·    1 Egg White (or egg replacement)
·    ½ Cup Brown Sugar (or your favorite natural sugar, like Succanat, Cane Sugar, etc)
·    ½ Tsp Cinnamon
·    ½ Tsp Nutmeg
·    1 Tsp Lemon Juice

Instructions:

1.    Chop up the apples and strawberries, place into a large bowl.
2.    Mash up the banana, set aside in a medium bowl.
3.    Add sugar to the apples and strawberries, along with the Cinnamon, Nutmeg, and Lemon Juice. Mix well.
4.    Mix the egg white, or egg replacer, into the mashed banana goop. Thoroughly mix.
5.    Pour the Rolled Oats into the banana goop, mix mix mix!! (For those who prefer drier crumble crusts, you can add flower to your rolled oats and banana mixture)
6.    Pour the fruit into a baking pan (whatever size you’d like)
7.    Crumble the banana mixture with your hands (wash your hands first!) on to the fruit.
8.    Put into a pre-heated oven at 350f for about 20 minutes or until bubbly.

This is amazingly sweet! Again, the heated up banana and the release of sugars. It’s fantastic!
Incase you use a bigger baking pan than will fit the oatmeal mixture, just double the recipe!

This is not one of my personal, made up recipes (like the Couscous, Mini Pizza, Muesli, and Banana Toast). But it is, however, one that has been in our family for quite some time! Enjoy!
