Have you considered evaporation? When I want to make a mix and use it
the same day, I use a little "sauna" device to help speed things up.
Basically, I mix the henna in a small ceramic bowl, then cover that
bowl with plastic wrap, and set the whole thing into another bowl
that is half-filled with hot water. Then I place this on a
windowsill, covered with a towel, to get direct sunlight. This keeps
the henna over 100 degrees F (for awhile, at least... until the water
cools) and I can have viable, dark-staining paste in 4-6 hours from
this method. A side effect is evaporation; that's one reason I cover
the henna bowl with plastic wrap. But in your case, you could just
leave off the plastic-wrap covering so that the extra liquid will
evaporate from the henna. This should gradually thicken your mix.

Just be careful -- if you cover the outer bowl when doing this, make
sure you leave some space for the water vapour to escape. Otherwise
it might condense on the covering (especially if it's foil or
plastic), and then drip right back down into your inner bowl of
henna, which will put you right back at square one. But if you decide
to dispense with a covering altogether, don't place it in the
sunlight. Good luck.
