I *do* have a warning sheet taped to my table, listing the
ingredients of my henna paste and asking for clients to "spot test"
if they are allergic to any ingredient, or if they know they have
extremely sensitve skin.

I have design books that I take with me, and this can be very helpful
even if th client doesn't find what they want in the book. Sometimes
I change designs they see to fit what they want, or sometimes they
just say "draw on me" which is a blast, but difficult when you don't
know what they like or don't.
Make sure you take head covering, water, food, and if possible, an
assistant to help you. The assistant is more helpful than you can
imagine when it comes to answering henna questions so you can
concentrate on your designs.
