I don't know how you had him sitting - but I have had better success
with people in a sitting position if they are (1) sitting on a chair
with no arms so you have free access to the whole back (I sit on a
low stool and work at eye level or slightly above), and (2) they are
propped with their hands up on a table in front stacked with pillows,
which they can lean into a bit if they get tired. The trick is to
have them sitting in a position where the skin is ALMOST the same as
though the person were standing.
I have not had much luck with Catherine's techniqe above -- I can get
the henna on pretty easily, but the skin still shifts around upon
standing.

I also use a hair dryer on the back because the quicker they can move
around, the more comfortable they are.
