Questions...I'm mixing paste today for the first time!!

O.K. here it goes,
I got my shipment from Castle Arts today and have mixed approx 40gr
pwder with fresh lemon juice.
So, Is a large zip lock a good idea to hold the paste while it brews
I plan on adding the EO tomorrow afternoon, the temp here is really
mild and I think it should be ok to wait 24 hours. So, if I mix it
tomorrow afternoon, but don't use it (on clients) until Saturday
around 9pm, what should I do with the paste? Is it more beneficial
to let it simmer awhile or refirdgerate it? It is only 75 today, and
tomorrow it should be in the low to mid 90's. Also, what's the best
way to get any lumps out of the paste? And do you add a little sugar
after the lemon mixture has set for 24 hours, or before?
Please advise.
