I show the angle I cut on my tip in the carrot bag pages. The tip's
gotta be cut at an angle AWAY from the seam, and you hold the cone
with the seam up so the paste doesn't catch on it. Mix your paste a
little softer, move your hand faster and squeeze less to get a
straight line that doesn't curl.

Sometimes, if the paste has gotten granular ... the curling starts up,
and then ...stir, stir, stir, add more lemon juice and it'll go satiny
again. Lumps? Stir harder ... or maybe sift ... or strain through a
stocking?

I lay that ribbon-shaped line on its edge for the finest lines, then
flat for wider lines. (like using a calligraphy pen).
