Sugar definitely changes the chemistry. The sugar in the paste soaksup moisture from the air which means that the henna dries more
slowly....this is great because it keeps the henna from cracking. It
can be a pain if you are in a hurry. Tho if you are in a hurry,
henna might not be advised!
