Oxidation

Dear Mr. Science,
The reason henna turns brown after orange is oxidation, right? So,
essentially, it's rusting? If you put lemon juice on an apple, it
stops the oxidation process. How come lemon juice makes henna
darker? Also, if you covered your skin with something so oxygen
didn't get to it (and yes, I know it would pretty quickly be bad for
you, I saw Goldfinger!) would it still turn brown or could you
preserve to orange or red of the first day?
