I spent my summers as a child swimming and camping at the numerous springs that help to feed the river. It's the real florida that most folks don't get to see in the tourist guides. The freshwater springs are fed by underground limestone caverns. Some folks will scuba in the caverns and find fossils of creatures that lived in the area when Florida was completely covered in water. The springs are ice cold to go swimming in! The name of my company, Wedding Cake Tree Aromatics, is kind of named after the various hollowed out cypress trees that are everywhere in North Florida. I was very little and I remember my Papa pointing out one that looked particularly spooky, he said it was a wedding cake tree. There's a song about it, "Froggy went a courtin and he did ride, sword and pistol by his side. Said Miss Mouse will ya marry me. Only if Uncle Rat will agree. Where will our wedding breakfast be? Way down yonder in the wedding cake tree."
