They take practice to learn to use, because they're inherently more
difficult to control than a jac bottle ... BUT they're also more
responsive, faster, easier, more comfortable. You just hold the bag,
barely squeezing at all. The pressure to make the line comes from the
warmth and slight pressure in the palm of your hand, not your fingers!
You mix your paste a bit thinner than usual ...

Some people like them better with pastry tips, I like them with the
tip just snipped off at an angle.
