I would avoid using any extracts of black walnut on your customers, or
people whom you don't know, because no one is ever sure about their
sensitivity to nuts. Some people do not develop this sensitivity
until they acheive sufficient lifetime exposure to nuts and nut
products, so it can be adults as well as kids.

I will tell you a little story about my cheese ball...a nice big round
one made with cream cheese and rolled in walnuts. I took it to a
party and a girl there started to feel a numbness in her throat and
lips after sampling the OUTSIDE of the cheese ball (where the walnuts
were) but she was OK with the INSIDE part. This lady never had the
slightest reaction to any nut before, but it was serious enough to
warrant a trip to the emergency room and a shot of antihistamine.
This is where I started to learn about latent nut allergies. I have
since discovered that walnuts are among the most allergenic of nuts
because they have all kinds of exotic fatty acids and such that set
off the immune system.

Now, you may say that this doesn't really affect you, and I'm sure a
thousand of you will write back to say that you have used walnut
extract a thousand times with no ill effect. Still I would suggest
leaving it out because for the small effect it has on your colour, it
doesn't pay to expose yourself to liability.
