The crop of CA in my fridge is more chestnut than some of the other
crops which have been more burgundy. I've gone through 8 harvests of
CA, at least in the last few years, and there has been clear seasonal
variation!
The Pine oil is apt to kick it to brown/black rather than red. (unless
there's something else in the mix I don't know about) If you want
reds, stay with steam and acid.
