There are a couple of things that could have gotten her henna black.
I was told that after you apply the paste and before it dries you
sprinkle cement powder all over your hands or feet and and then wrap
them up in a plastic bag for an hour. The result is very black
henna...supposedly, never tried it myself. CCJ says that this works
because of the lime in the cement..it darkens henna but it is also
bad for the skin. The other possibility is ammonia crystals. Kree
knows more about this than I do. I was told that you mix them into
the henna paste but the method she heard about involved mixing it
into plaster and slathering that onto dried henna (I think). Nick
tried this method and didn't find that it turned the henna black.

The woman you met may have had a combination of various techniques:
any of the above, and maybe gasoline in the paste etc. Also, when
you have henna done in Morocco it is almost always darker than when
you do it exactly the same here in the US (including the outside
temperature). CCJ suggested to me that this may be due to the high
lime content in the water in Morocco. Maybe I should start bottling
the stuff and bringing it back with me! ;-)
